Fifth easy recipe: a first
Cream of carrot, pumpkin and ginger
In a pan fry the onion with a drizzle of olive oil. Cook the squash, cut into small pieces, add carrots peeled and grated vegetable stock and salt flush. Boil a potato.
After cooking the potato puree and vegetables diluting if necessary with a little 'vegetable broth. Serve the soup with grated ginger and toasted bread, pepper and a drizzle of olive oil.
